One of my favorite restaurants in my hometown is Vin 909 which has a nice atmosphere, excellent reasonably priced wine and delicious pizza and salads. Every time I go, including on a recent trip, I try to make the salads at home. This latest salad is based on one I enjoyed recently with champagne vinaigrette and mixed greens with goat cheese. I prefer the saltiness of feta with the sweet tasting melon, so I’ve substituted it here. This is a great salad to enjoy during these waning days of Summer. Try to get your watermelon now while it is still in season and sweet as sugar!
Ingredients
2 ½ cups seedless watermelon, cubed
½ cup crumbled feta cheese
½ cup pistachios
½ a bag of baby arugula
¼ cup olive oil
2 tbsps. white balsamic vinegar
1 tsp. honey
Sea salt
Fresh ground pepper
1. Make the dressing by adding olive oil to a glass measuring cup. Add in white balsamic, honey, salt and pepper and whisk together. Set aside.
2. Take a small watermelon and chop the flesh into large sized cubes. Place washed arugula in a bowl. Add watermelon and mix gently. Add a little dressing and top with pistachios and crumbled feta. Drizzle remainder of dressing over top and serve.
