Now that we are soon entering the Autumn season, I am striving to make more salads at home that are a perfect balance of what is seasonal at this time of year. Sometimes, I add apples to a salad, but inevitably, I also reach for pears which are beautiful with walnuts or pecans and the bitterness of radicchio and kale.
Ingredients
2 slightly ripe pears thinly sliced (I used Bartlett)
1 cup radicchio sliced into ribbons
5 cups lacinato kale sliced into ribbons
1/3 cup chopped walnuts or pecans
¾ cup Pecorino Romano cheese shaved or cubed (depending on your taste)
¼ cup olive oil
¼ cup balsamic vinegar
1 tsp honey
Sea salt and freshly ground pepper
1. Combine lacinato kale, radicchio, and pears in a large serving bowl. In a small glass measuring cup whisk olive oil, honey, and balsamic vinegar and season to taste with salt and pepper. Garnish with shaved or cubed Pecorino Romano cheese and walnuts or pecans and enjoy.
