I am very big on spice mixtures that can be used to flavor things in a healthful manner and Dukkah, which is an Egyptian blend of herbs, nuts and spices fits the bill. It works perfectly on this light salad that is perfect to kick of the season!
Ingredients
3 ripe nectarines, sliced
2 avocados, sliced
3 Persian cucumbers, thinly sliced
1 lime
½ cup pearl mozzarella balls
Olive oil
Dukkah (available at Trader Joes)
Sea Salt
1. Assemble the salad components by laying the cucumber slices in an oval dish and gently covering them with the nectarine slices. Cover on both sides with the sliced avocados and scatter the pearl mozzarella balls over top the various components of the salad.
2. Drizzle with olive oil and squeeze the juice of one lime over the salad. Sprinkle Dukkah over the salad along with a healthy pinch of sea salt. Serve!
