There is something elegant about a French green bean. It just looks beautiful on a serving plate as all tend to be the same size. This is a great side dish when you are pressed for time with any protein. You can simply microwave the beans in the bag for about 3 ½ minutes after cutting a slit in the top and voila – you have hot cooked beans. What I like to do is add them to my pan with butter and herbs and toss them together right before serving. It’s easy and everyone likes them!
Ingredients
12 oz. haricots verts (French green beans)
2 tbsps. butter
1 clove chopped garlic
2 tbsps. toasted pine nuts (Trader Joes sells these already toasted, but you can do this in a dry frying pan on medium low heat just until they start to color)
¼ cup grated parmesan cheese
2 tbsps. Chopped Italian parsley
1 lemon, zested
Sea salt and fresh ground black pepper
Microwave the haricots verts for 3 ½ minutes at full power after cutting a slit in the bag.
Take a flat sauté pan and add the butter and let it melt over medium heat. Add chopped garlic and sauté for 1 minute. Then add all remaining ingredients and toss.
That’s basically it. You are finished and ready to serve immediately. Alternatively, you can simply wait until you are ready for dinner if you want to make ahead and warm the beans in the pan with the additional ingredients until ready to serve.
