Greek Salmon in Parchment


If you’re looking for one of the easiest meals you have ever made, try using parchment paper! Creating a parchment paper package that serves as an envelope to steam the food in a hot oven is a fancy, yet flavorful way to serve a meal. It can be used for vegetables, fish, or poultry and creates moist, tender meals cooked to perfection!


Ingredients

4 6 oz. salmon fillets, skin and bones removed

½ cup feta cheese, crumbled

½ cup chopped dill

2 lemons, one thinly sliced, the other juiced

½ cup Kalamata olives

1 zucchini, thinly sliced

2 small russet potatoes, peeled and thinly sliced

½ tsp. Aleppo pepper

Olive oil

½ cup chopped basil

1 cup of halved cherry tomatoes

2 garlic cloves, chopped

Sea salt

Fresh ground pepper



1. Preheat oven to 400 F.


2. In a small bowl, mix ½ cup olive oil, chopped dill, Aleppo pepper flakes, 2 garlic cloves, the juice of one lemon and a pinch of fresh ground pepper and sea salt. Set aside to use later.


3. On a square piece of parchment, place five thin slices of potato and top them with five thin slices of zucchini. Sprinkle pepper and salt over the vegetables. Then place your piece of salmon over the vegetables. Top with a small amount of the sauce prepared in the small bowl earlier. Then place two thin slices of lemon on top of the salmon. Scatter pitted Kalamata olives over the salmon and seal the parchment into a package by folding over the top and gathering the sides and sealing entirely.


4. Bake for 25 minutes. Remove from oven and carefully open each parcel, letting the steam escape. Top each salmon filet with chopped basil, ¼ cup halved cherry tomatoes, and scatter a small amount of feta cheese over the bundle.
