I am always making salmon because it is affordable, healthy, and easy to make. The only problem is how to dress it up and make it interesting! I love curry. I would put it on anything if I could, and often do! The comment I hear from my kids most often is “why do we eat so much tahini” and “curry again?” This is very easy to make and so delicious. The kids may complain, but I know they love it!
Ingredients
2 lbs salmon (I usually prepare in 4-5 servings)
1 tbsp. red curry paste
½ cup coconut cream (Thai style, not cream of coconut for Pina Coladas)
2 tsps. light brown sugar
2 tbsps. fish sauce
2 tbsps. chopped cilantro (with extra for serving)
1 tbsp. Lemongrass paste (available in most grocery stores) or use 2 tbsps. chopped fresh
2 tbsps. olive oil
Lime halves for serving
1. Combine the curry paste, coconut cream, brown sugar, fish sauce, cilantro, lemongrass and olive oil and mix well.
2. Rub the mixture evenly over salmon and let marinate for at least an hour.
3. Place salmon on grill grates skin side down and cook for 10 minutes on medium high heat, until fish is just cooked through.
4. Remove from heat and cool slightly before serving.
5. Top cooked salmon with remaining chopped cilantro and serve with lime halves.
