This is a very easy side dish to make that pairs perfectly with pork! All you do is throw everything together in a large pot and it turns out pretty much perfectly! Nothing to it!
Ingredients
One large red cabbage, shredded into thin strips, core removed
2 tbsps. Canola oil
One small onion thinly sliced
2 apples, peeled, cored and diced
2 tbsps. Balsamic vinegar
2 tbsps. apple cider vinegar
¼ tsp. allspice
Sea salt
Fresh ground black pepper
Heat the oil over medium heat in a large lidded pan and add the onion, cooking for about 4 minutes until softened. Add the balsamic vinegar and cook mixture for another 3 minutes. Then add the apples and cook for another 3 minutes.
Add the shredded red cabbage to the pot and toss thoroughly. Stir in the allspice, apple cider vinegar, and salt and pepper. Toss together and cook for one hour with the lid on stirring occasionally. Add a little water if it seems like the cabbage is becoming dry. Voila, this is ready to serve. The flavors are actually better a day later, so this is a perfect make ahead dish.
