This is a simple, yet crowd pleasing salad that is great to serve as part of a buffet for holiday celebrations including 4th of July or even Christmas! I love charcuterie and antipasto platters, but this stretches everything for more people. It is a colorful and fun side dish that includes something for everyone!
Salad
2 Romaine Hearts, chopped
½ lb. salami slices, quartered
8 oz. mozzarella balls, halved
1 cup marinated artichoke hearts, quartered
1 cup roasted red peppers chopped
1 cup cherry tomatoes, halved
1 cup chopped pepperoncini
½ cup sliced black olives
½ cup marinated mushrooms
Dressing
½ cup olive oil
¼ cup red wine vinegar
1 tsp Dijon mustard
½ tsp. oregano
¼ tsp. red pepper flakes
Sea salt
Fresh ground black pepper
1. In a large bowl, toss all salad ingredients together.
2. Make the salad dressing by placing olive oil, vinegar, mustard, oregano, and red pepper flakes in a jar. Use a whisk to mix the ingredients together. Season with salt and pepper.
3. Dress salad with dressing and serve!
